She married her high school sweetheart, Bob, at Camp Pendleton, CA, before he left to serve in the Korean War. They moved to Lincroft in 1954 and lived there for 45 years. After retirement, they moved to Bradenton, FL for 20 years, returning to NJ just 3 years ago. Eileen worked as the Bookkeeper for St. Leo the Great School for 25 years. She was an active member of the parish, serving in the Rosary Altar Society. She was a member of the Lincroft Fire Co. Ladies Auxiliary and PTA President at Red Bank Catholic High School. In Florida, she was a beloved member of St. Joseph's parish and the “Panera Breakfast Club”. She enjoyed “card game” night with her friends, beach days with her children, Summer vacations to Wildwood Crest, and day trips all over the area with her family. She loved to travel, read mystery novels, bake cookies and complete crossword puzzles.
She is predeceased in death by her children-Mary Elizabeth, Chuck and Nancy- and her siblings, George and Virginia.
She is survived by her loving husband of 69 years, Deacon Bob Nimon, and her adoring children, Michael and his wife Tracy, and Jennifer and her husband Gonzales, her cherished Grandsons: Domenico and Antonio and her spoiled Granddogs: Kayce, Cara, Lily and Pepper.
